I don't know of anything specific beyond the normal checks on the safeties and the trigger pull. Most folks like to check on fit and finish, but that is obvious. If there are defects, they are probably not obvious to the eye, and you won't find them until you shoot the gun.
Do talk warranty. Will the dealer stand behind the product, at least to the extent of paying the shipping back to the factory? If he tells you that "you bought it you got it", consider another dealer.
