Alright. Now I know I am gonna have to hold 'em myself and shoot 'em myself, but I'd like opinions on these three guns that I've narrowed my selection down to.

Springfield XD Service
SIG 239
CZ 2075 RAMI

Criteria: It's going to be a 9mm. I love .45 ACP and I'll get some 1911's later, but that is an expensive hobby which (I hear) consumes it's victim an leaches their bank account... That said. I like 1911's and the single action option of the CZ. I also like the 1911 like ergonomics of the XD. I enjoyed shooting the SIG, and hey... it's a freakin SIG... Feel free to add input and other options.
NOTE: not really a fan of GLOCK ergonomics. Good guns though.
Also, I am not looking for a 9mm 1911.

If you enjoyed shooting the SIG, I'd go with that. It'd be easy to conceal and it would probably have the best trigger of the three.

I carry a RAMI 9mm; it's a bit chunky, but it's definitely a shooter. The SA trigger might be a bit heavy, though. It also has the typical CZ camming action which many don't like (I perceive it as sort of a spongy, Glocky feel). You will need to practice taking off the slim thumb safety. Mine has about a thousand rounds through it, and it works flawlessly now. I did a full review here:

Only shot a few XDs, and briefly at that. But they are very popular.
 
I have only fired the XD minimally and only fired full size CZs but the 239 in 9mm is a very good handgun and wouldbe my choice of the three. Mine is quite accurate and reliable.
 
Are you planning to carry these? If not, I'd definitely check out the SIG P225. Its a single stack 9mm like the 239, but fills in the hand nicer with the slightly longer grip. The double stack SIG's are awesome too, the P228 or the full size P226. Just something to consider, but I'm guessing you already did your research

You already realize how great a SIG pistol is, that's a good start. The XD is a fine pistol also, but its in different classes. I'd still choose the SIG over the XD. But for me the SIG P-series is the best non-1911 line out there.

I dont have any experience with the CZ Rami, but for a range shooter I'd get a CZ75 instead.

Go with the P239/P225.
 
Sig 239 is my favorite carry weapon. Mine's in .357 Sig, but regardless of that, they are great little guns.

Disclaimer: fine choices all around... You've probably already scoped out prices (XD come up the cheaper of the 3?)

Now I will add this: Springfield Armory XD = LIFETIME WARRANTY on a gun that is crazy popular now and getting more popular by the day. Meaning, lots of mods and aftermarket parts for a gun you can pick up cheap and will last you a lifetime.

just my 2 cents from someone who's own many different guns (including cz & sigs) loved my sigs, but nobody took care of me like Springfield Armory.
 
Have a 239 and a CZ. My personal choice is the CZ, but I have a fairly large hand, and the CZ just feels better to me. That and the fact that it can be carried locked and loaded like the 1911's. From there on both are well made, reliable in the extreme, and are wonderfully accurate. Good luck with your choice. You really cannot go wrong with any of these three. So the one that fits and has the features you prefer is your right choice nomater what any of us say.

People are just going to tell you to buy what they own

Those are all good guns. Buy the one you like the most. Still can't decide. Write each gun down on a piece of paper and have somebody draw out of a hat. Do this without looking back.

Or (what I'd do)

Buy all three!
