Are there loopholes to the California Certified Handgun List?

I was wondering about the possibility of this. Can anyone else confirm that the DE is easy to change calibers like this?

Well, I own a Desert Eagle in .44 and I can confirm that, yes, it is just that simple.

Now, if you want to convert to .357, you will have to buy a new bolt in addition to new mags/barrel.

Please note that the model MK XIX is the only one that can switch between all three calibers.

However, the MK XIX is the only one currently in production, so you won't have a problem buying new.
