I've read, heard, etc... that for a CCW handgun you should put atleast a few hundred rounds (some say upto 500 rounds) through your carry weapon to make sure that it is reliable enough to trust when it counts.

What is the conventional wisdom for a HD/SD shotgun? How many rounds?

What I recommend is the reliability test first espoused by Massad Ayoob.

200 rounds of DUTY ammo glitchfree.

A failure of less than .5% is acceptable.

This applies to any personal weapon.

The reliability of the operator is best tested along with the reliability of the specific shotgun... 8^). A few hundred rounds fired in training and practice will help make sure both can perform properly if required. The protocol should include the rapid fire of enough duty ammunition to get the gun hot, to make sure it will function reliably with the ammunition in question in that condition. I've found that about 15 rounds rapid fire will suffice in that regard.
