If you buy a gun from a dealer at a gun show and there is a waiting period longer than the show, you handle it in the same way as if you bought on-line. You pay the money (deposit or whole thing), get a receipt with the amount paid (and due, if any) and the dealer's name and address. Then you get your dealer to send that dealer a copy of his FFL. The seller ships the gun to your dealer, and the transaction proceeds just like any other transfer.
Alternately, if the gun show dealer is in the same state, you can go to his store after the waiting period, but at the price of gas, a dealer 200-300 miles away, even if in the same state, is just (to me) too far to drive.
