I know what you are talking about. Making a ornamented leather sheath takes a lot of time and increases the cost of the knife considerably.

I just found a cold steel safe keeper III. I must have bought it when I still did not know anything about knives and thought that it was the coolest thing in the world (sigh). I sharpened it with care, just for fun, and got rid of the double bevel (??) sharpening at the same time. To my amazement it cuts through wood very well. I am going to make a new sheath for it, to replace the terrible plastic one. After seeing your knives I will probably go for minimalistic approach.
 
I've been forging knives from 1080, 1095 and 5160 for a few years now. My forge and home is about 200yds from the Bay of Fundy, a very foggy and salty place.

The only time I have rust problems with my knives is when one languishes at the bottom fo the kitchen sink for a couple days. And a brillo pad fixes that in about a minute.

I've been carrying one in my pocket now for 4 years. It's well patina'd but un-rusted.
