Across the board they are all solid choices and with that said it really depends on what you hope to end up with. As such, rather than give a preference I'd ask you to consider the following:

The 1991 is of course the least expensive option but also the (in my mind) best candidate for a serious custom build of any Colt. It allows any custom smith the opportunity to fit the specific parts he/she prefers. Not all will take piece meal orders since theirs is the name the end product will be associated with. A fine everyday shooter as well needing nothing unless you prefer a beavertail for your hand's sake (I do).

I've put plenty of rounds down range with a 70 reissue and I must say it is indeed a step above the standard 1991. While fit is only mildly better the pistol's accuracy does seem elevated and the finish is definitely nicer. Noteworthy that it required a bit of tuning to ejection before it was ready for prime time but never did jam.

The XSE is where the smart money is for many buyers having all those features now deemed "mandatory" in a modern 1911 to include dovetailed sights, undercut trigger guard, flat MSH, lowered ejection port and beavertail GS. Nothing much to do but shoot it and enjoy. Fit is also improved over the standard 1991 and finish is decent. Accuracy wise there is little to discern it from the S70 Repro.

Safety parts are a sore subject with many but I can say that I've yet to personally experience any failures and tuning can often be accomplished with a simple swap of a $3 part with no fitting required. Mark me as neutral in the arguement as all my composite pistols are equipped with similar systems.

That's my take. In the game with future upgrade options, "classic" features or niceties aplenty. If the question were which to carry I'd say the XSE for the sights alone (easier to swap at home) but it really comes down to your wallet's threshold and your intentions.

I love all the Colts I own several I like the XSE but man you talk about sharp edges and snags I'm really disappointed in the lack of polishing or what ever you want to call it, all the beautiful work that went into manufacture and then they didn't finish the job.

The 21st Century Commander and the Colt Commander XSE. I really like them both.
 
COLT builds a solid gun and they have some really nice models to choose from these days. I have some new and old COLTs and would recomend any of them.

However I will say my newer XSE Combat Elite stands out as a great multi purpose pistol for me. It's accurate, relibale and has all the bells everybody wants on a defensive 1911 these days. Pretty snazzy looking too. Build quality on mine is very good for a mass produced factory gun. Not too loose, not too tight on the slide/frame and the beaver tail is nicely fit.

My EDC is an older 1991 Compact Model also known as the Officers ACP. Pretty loose slide/frame but the barrel locks up tight in the slide. It's dead stock and even still has the crappy plastic trigger. It's more than capable of good accuracy (I can one hole groups at 7yrds) and very relibale for such a short slide. It's got a very basic parkerized finish and has stood up to years of daily carry like nothing happened.

I have an old 70 Series that I bought because it was cheap ($350 in the used gun case at GM). One of the last 70 Series built before COLT switched to the 80 Series. It's dead stock and it was someone's carry gun for a long time with many years banging around in a glove box or under a truck seat to judge from the electro nickle finish. This gun is the epitomey of the sloppy fit and finsh COLT was know for in the late 70's.... Dosen't matter thou as this gun is superbly accurate for some reason. It eats every type of ammo I have run thru it and runs 100% with the stock Metal Form 7rnd mag and my favorite Wilson 47D mags..... One of my favorites at the range and I wouldn't hesitate to carry this gun anywhere if it was the only one I had.

This is my newer 0461 Commander. I view this gun as the best $699 I ever spent.... I bought this to have a custom carry gun built.... My vision was identical to hinton03's.... Once I got the gun I couldn't bring myself to have it cut up just yet. The finish is that nice. I carry it occasionally as is and enjoy it at the range. Maybe in a few yrs when I bore of it's pedestrian looks I'll send it off to the custom shop for the looker treatment.

I also have owned a few Gold Cups. Not to worry, I didn't let them get too far away.

I gave this one to my brother for Christmas last year since he is a big .40 S&W fan. It is a "Gold Cup Elite 40" limited production build for Accusports back in the 1990's.

This is your standard 80 Series Gold Cup National Match. So my dad wouldn't feel outdone by my brother I gifted it to him for Christmas last year.
