When someone says they want to consolidate ammo for SHTF, I always envision them having one calibre, say .308, and when needing resupply only encounter, say .223. I love diversity!
Personally, i see enough difference in use to justify owning both the 7.62x39 and the 5.56. In fact, i have rifles chambered in both, and find their "best" uses to be significantly different.
