i just got my 75 sears today from CZ-USA. I should be getting my trigger and springs from CZCustom either tomorrow or Friday. I handled a 75 SA Target a month or so ago and that's what i was going to buy. From what i remember from handling it, my SA's trigger break feels similar to the Target. I should make it to the range this Saturday.
for "cheap" guns, the CZ has my old XDm (w/ Springer Precision kit) and M&P-9 Pro (with APEX kit) beat with the work that i've done to it.
The 75SA Targets are nice, but you can honestly make your regular 75SA even better without a whole lot of fuss really... the Target's still have the FPB in-place, since you're tuning your own you can lose that (which is what I'm assuming you plan to do by ordering a new sear, I'm guessing you ordered up pre-B sear, if not, you should exchange it).
I'd guess you've already got the CZC SA trigger inbound and a 13lb hammer-spring, really the biggest thing though is the competition hammer, it's the best $63 you may ever spend.
The competition hammer changes the geometry of how the sear and hammer interact drastically, mostly by using a higher sear-bed (not just shorter hooks), and CZ sears are only case hardened so they don't really get stoned too much just lightly polished with 600-1500 grit and/or maybe some Flitz or Brasso, doing trigger-jobs on them is quite a bit different than what you're probably familiar with in the case of 1911 trigger jobs; stoning their sears ala 1911-style will just lead to you having to do it over again soon, as the metal under the case-hardening is really soft. The new hammer and lighter hammer-spring really does 90% of it, it's not really a stoning/angle-thing...
Your 75SA with a 13lb hammer-spring, CZC competition hammer, no FPB, and CZC SA trigger with the pre and over-travel set will have about <3mm of
total travel: maybe 1.0 - 1.5mm take-up, crisp-break, next to zero over-travel, 1.0mm reset and you should end up with a no BS 2.0 - 2.5lb trigger pull before polishing, if you polished the sides of the trigger bow and stoned and polished the sides of the hammer expect to be closer to 1.5lbs! When you're finished that SA's trigger should rival that of your best 1911's (and likely be better than some of them).
