1851 Navy, since it's the only one I have now and I know it inside and out.
Plus that fancy shoulder stock can make it into a decent mid-range shooter.
I LOVE my Remington, but in a SHTF, post apocalyptic scenario, where I had to live or die by one black powder hand gun, for the duration of my years on Earth, it'd have to be a Ruger. They're still not historically accurate, and I prefer for real world, every day use, guns that are.
I would quickly tire of lugging around the 1847. So that leaves the 1860 and the Pocket Police.
The larger caliber of the 1860 certainly has much merit but "light hunting" was specified so I will go with the 36 caliber Pocket Police. It is lightweight, accurate, easy to carry and uses less lead and powder than either of the larger revolvers. Proper bullet placement results in more game than using a bigger bullet. Others may disagree but for me, the little Pocket Police would suffice.
Oh good grief! RUGER? How boring can you get? Let's hear it for the Lemat!! Use the shotgun barrel for small game! Rain FIREPOWER down upon your enemies with NINE shots!!!
One of my all time favorites is a Colt 2nd Generation 1862 Police. I have had this gun for a little over 20 years. Upgraded it with elephant ivory grips about 5 years ago.
For a C&B its been extremely reliable and a lot of fun to shoot.
I love the Colt 1860 Army. It fits my hand and balances perfectly for me. But to meet the conditions you mentioned I will concur with most of the other and choose the Ruger Old Army with 7 1/2" barrel and adjustable sights. It is capable of much more than any of the repo's.
