I can tell you what I would do. I doubt you will find any Remington brass in .308 Winchester or 7mm-08 Remington. Lately there has just been none to be had. Possibly it is going to produce loaded ammunition.
I am seeing plenty of once fired 7.62 x 54 NATO brass out there. Quality brass cleaned and deprimed. I have some sitting here and the average neck thickness on some Lake City LC - 13 and some WCC - 08 is 0.015" give or take 0.001". I also have some new Remington .308 Winchester and 7mm-08 Remington brass, new as in it was new 20 years ago. Average Neck thickness is right around 0.014" for both calibers. In the past all I have done was run the 308 brass through my 7mm-08 sizing dies. The 308 necked down to 7mm just fine and I never had to neck turn at all. Never gained enough in the necks to worry about.
I would just get a bucket of once fired 7.62 x 54 NATO brass and use it for my 308 and 7-08 loadings. You could find yourself waiting a long time for factory 7mm-08 brass. I have seen the once fired stuff at Gander Mountain, Cabela's and assorted online distributors.
