Kitchen knives for SD???

I have often considered the same thing, or a steel in one hand and large butcher's knife in the other.

Yup, kitchen steel for me. I have a 18" comercial steel that I use. It'd do well with my Chef's knife or the cleaver.

A good chef's knife and a sturdy, agile "pointy" club - I like that idea too. Or a big knife and a large, sturdy pan lid with a handle on it.
