Birds!
I've never had the pleasure of a goat or sheep hunt, but nothing has tired me out like hunting little birds! Chukar hunting in the Mojave desert climbing up and down plateaus all day long several days running really takes it out of you.
I haven't seen anyone else mention it, but snipe hunting in marshes wearing waders also can be a killer! You end up high stepping for hours through mud and vines that grab your legs constantly and end up with a few ounces of bird.
All of them are still worth every step!
