My dad is concerned about shooting modern ammo in an old M91

As long as nothing is cracked or broken, I don't see why not. It was built as strong as any other bolt action military rifle of the time.
 
You could always have a gunsmith give it a look, check the headspace, etc. In general, modern ammunition from US companies for old weapons or those of uncertain quality control tends to me watered-down rather than hotter than the original surplus. If it works with surplus, it would probably be fine with the Win.

It is a good idea to wear a pair of safety glasses when shooting; especially, with old surplus, where a case might split and release hot gasses back through the bolt. Clean up from shooting surplus with hot water and dish soap. Enjoy your MN.:)

Seriously a really good idea as I have had it happen more than once.
