Putty root. The root works like an antacid. Found in hollers.
Ginseng. Let you imagination go wild... Hint, you'll need to look under fallen logs to fine it. Deep in hollers.
Ramps. Like a cross between a onion and garlic. Very good fried w/ potatoes. Found on north slopes in higher elevations.
Branch Lettuce: Wild lettuce. Cut it up and put some chopped ramps on it, then pour hot bacon grease over it. Yum!
All these are native to the mountains of western NC.

Edit:
Boil it about 10 min, rinse it, drain the water, add fresh water and boil it again. After it cooks down, put it in a hot pan with cooked down fatback and stir it a few times. Don't plan any long road trips for the next couple of days....Poke salad, must be cooked, poisonous otherwise,
