Only One Knife

If you want a knife to work with as I do. Cutting cardboard, scraping paint, and occasionally need a clean cut in rubber or plastic for something that needs to be trimmed. THIS works, it can be resharpened in five seconds to a factory new edge, and is under fifteen dollars. It opens and closes easily with one hand, and has a good functional pocket clip.

Walmart has a similar one under the brand name of "Sheffield" for under ten bucks, and harbor freight has a generic one for 3.99, if you want to pinch pennies.

For me it'd be either a stockman or trapper pattern with carbon steel blades. Something like a sixties-era Case would do nicely. Alternatively, I'd take a four-inch trailing point or dropped point fixed blade, made of 1095/5160/52100/L6. No stainless steel on any knife I own.
