Will regular 1911 parts fit this piston i.e. trigger, sear, disconctor, hammer etc

Also gun has series 80 safety junk, can I leave it out and just run the frame as a series 70 would be ran?

IMO you should always use a proper spacer when you remove the series 80 guts. My P14s have had very good triggers so I left them alone.

My competition P 14 from 25 years ago got all AMU surplus fire control parts including hammer. Had firnig pin stop, slide release, extractor and other parts "Bullet proof" forged and hardened best available standard 1911 stuff. I still have the gun and it is in bedroom fingerprint safe C&L :) Of course the ramped barrel is different . I wanted reliability foremost and a very good gunsmith set it up correctly. I used the stock barrel and even the stock sights once they were dialed in for ball 230 grain ammo . It never jammed, ever .
 
Trigger bow is twice as wide on the 14.45. Bought a metal for mine trigger on ebay. Been very happy with it.
