I hope they're extremely successful with their 10mm offering and I'm very happy to see they're offering anything at all in 10mm. So, I'm not a hunter at all, have never hunted and don't know any handgun hunters. But, I have some serious doubts that too many folks would choose a 5" auto pistol in 10mm for hunting--but I could certainly be wrong. The single-stack configuration OTOH, I would think is okay among the handgun hunting market--assuming greater capacity isn't a big deal for the hunter.
Now, for those that want a 10mm auto pistol who don't want it for hunting, the P220 seems like a 'just okay' configuration, and I'd expect it to be about as successful as the Smith & Wesson 1006 and similar models. It's fairly big, fairly heavy and fails to take advantage of the 10mm's double-stackability.
They know their market better than I do, for sure--but I'd just think they'd do better with a serious 10mm carry option, a market space where I think there's a hole to fill. For hunting with 10mm, there's the Glock 40 longslide, the SW 610, any number of offerings from Fusion if you like 1911s, and EAA has long offered their 6" Witness Hunter--a doublestack. It seems Sig could have really made a significant contribution with a new gun: a compact double-stack 10mm all steel gun. There are few if any options for that, that I'm aware of.
I've always liked the P220, and the Elite Stainless Match is indeed a beautiful gun--I'd love to have one in 10mm. But, the Elite Stainless P220 I did own, I sold simply because it doesn't really serve any purpose I have for a handgun. But, that was a DA/SA configuration, and the SAO offering adds just that much more attractiveness to the gun, for me at least. If the gun does nothing but to increase the awareness of 10mm and perhaps get some folks to familiarize themselves with this wonderful round, then that's great.
