So I pick up my NIB M9 today and take off the grips to slap on the Hogues I got for it.

Using my allen key, correct size mind you, the hex slot strips out like soggy wood!

So to clarify, it's not the threads that are stripped, it is the "allen/hex hole" on the head of the screw itself that is stripped.

I can't loosen the screw at all.

Help?

You can sometimes use a metric/sae hex key, opposite of what's in there, and use a slightly larger size to remove them. If that does not help there is a tool called "Knockout" that you tap into the hex hole then use an adjustable wrench to screw out. Or if you can find one to fit, a "reverse out", these are reverse course spiral that grabs the hex hole and can then be used to remove the screws.
Take it to a gunsmith.

or try a torx bit of the same size, their edges are more pointy and might hold.
