Target Pistol Grip Thumbrest

The most obvious would be that for the best accuracy you want every thing the same from shot to shot. A single position for a thumb to lay eliminates all the other places it could wind up.
 
A properly fitted grip allows you to relax your hand for more endurance and accuracy. I use custom Herritt grips and love them. The consistency shot to shot is great.
 
Ask it the other way: Why would you ever not want a thumbrest? Well, because of bulk (and a little weight). And maybe a little slower getting into a good grip. And sub-optimal for weak-hand shooting.

Are any of those things an issue for a bullseye-type target gun? No, they are not.
