I gotta vote for a Glock 27. Then get ya a couple hi cap mags and a drop in 357 Sig barrel and you're set. Might be a little over the budget all totaled but you get the point.....
I chose a Glock 19. I feel it's the perfect size for 9mm. I rented a Beretta 92FS full size and the much smaller and equal capacity G19 could do everything that it could do.
I'll be the oddball here and recommend the (fairly) new SigPro 2022. I have been really pleased with mine so far. Great value. I bought my Certified Pre-Owned from Gander Mountain. It was basically like new. No blemishes on slide or frame. All internal parts had been inspected and replaced as necessary from SigArms. The CPO pistols come with a 1-year factory warranty.
Mine was $450. I think the new ones run about $550 - $600. It is .357sig, but the 2022 is available in .40cal and 9mm as well.
Mine has night sights and picatinny rail.

I have two glocks and an M&P. The Sig is my favorite, although the Glock 26 is my daily carry. The Sig Pro 2022 draws home defender duty, instead of my Glock 22, which is still miffed that I put it in the safe.
I'm a big fan of polymers, and the Sig does not disappoint.
It took me a while to finally buy a polygun, then a while to find the right ones...finally settled on the HK USP in a few calibers & sizes and a G19...YMMV
Out of my Polymer collection, my second favorite pistol is the M&P. I know you said you have already passed one up. If your mind is made up, that is cool. But I can tell you that I've had absolutely zero problems out of my M&P9 with a little over 500 rounds downrange. It is a fantastic weapon.
And of course, a Glock is a Glock. Solid. Indestructable. Dependable...ad nauseam.
I like the Sig because it is different. It is underrated and catches most people's attention when they see it.
Like the M&P, the SigPro comes with interchangeable palm swells (grips x2).
You might also look at the Beretta PX4 and the Walther P99. I have heard good things about both of these models, but haven't shot either.
Takedown is actually a breeze. It's like a cross between the 1911 and a Glock?
The slide lock doubles as the takedown. You pull the slide back just past where the lock notch is and the long slide lock (highlighted in the first photo) actually comes out (when pushed from the small notch on the other side - highlighted in the second picture), which allows for the slide to be seperated from the frame. From there, it is almost exactly the same as a Glock (as far as field stripping goes).
Takes me about the same amount of time to field strip the 2022 as it does a Glock. But in all fairness, none of the polymers that I have been around are very difficult to field strip.
BTW...I'm not a representative of SigArms. Even though it probably seems that way.
