Go with the Saiga. They're great guns. They even shoot without being converted.
That being the case, take a breather after your plunge into the AK world. Take your unconverted Saiga to the range and shoot the crap out of it until you've acquired the plan, parts and directions to convert it the way you want. If the original configuration seems dorky to you, just pretend you're shooting an SKS.
So with the Saiga, you get two guns in one: the original (you may like it) and whatever you convert it to. You also get the ability to change an AK to the exact configuration you want at any time in the future.

P.S. The real question is whether to get the Saiga in 7.62x39 or 223. If you reload, you may want the 223. Better yet, get one of each. Now you only need three other guys.
