What's the ideal setup for a 1911?

For duty work theres a good chance you will be wearing gloves at one time another. I would go with oversized mag release & slide release, no ambi. safety, in a scuffle dirt and asphalt can hang them up. As far as sights I would go straight eights, if can see both dots your lined up.
 
Commander size slide and frame. If you need an Ambidextrious safety, then get one that is ultra low profile. Non beavertail grip saftey but a slightly extended one like what is on some Colt Commanders. Long or short trigger based on your hand size. Checkered plastic grips and checkered mainspring housing and frontstrap. Rear slide serrations only. Heine straight 8s or 3 dot in Tritium (your own preference on nightsights also apply). Fixed sights would be ideal. For the love of Pete no "tactical" rail. Beveled but not extended mag well. Id stick with Wilson or Kimber, or Colt, or Chip McC 7 round mags. Commander style hammer. I would also go with the Series 80 platform for political reasons within your duty station. Id go standard on the slide release as well. No need for a full length guide rod but if you have it, it is just as good. A light weight frame only saves 4 ounces so that is not a biggie either. No need for a lanyard loop I wouldnt think. Stainless or some ultra durable coating like melonite or duracoat.

Did I miss anything?

I would personally go with the standard modern version Series 80 Colt Commander in stainless. Reasonably inexpensive by 1911 standards and tried and true manufacturer.

Send one of these Series 70 Colts to Evolution Gunworks in Quakertown PA for a reliability tune and a TFO (tritium fiber-optic) front sight and a King's Hardball Rear Sight, get a half-dozen Wilson #47D or ETM magazines, and you are good to go! skeeter_08

As long as your 1911 fits this criteria:

Ambidextrous thumb safety and "speed bump" grip safety:
All steel, preferably stainless,
Checkering on front + back strap,
Wilson Combat magazine,

Anything else should be your choice.
