I wouldn't bother with the GI, the Mil-Spec offers a lowered and flared ejection port, beveled magwell, and sights that you can see.
 
Remington R1

I put over 300 rounds this week through my new R1. It was flawless with 230 FMJ Speer Lawman and Federal American Eagle ammo. The Remington, Colt and after market 1911 mags I had all functioned perfect in my gun. The three dot sights were easy to pick up and is definitely point of aim. At 36 feet, it chewed one big hole in the target and the spread as I moved farther back was my ability and not the gun.

I initially did not like the trigger (was a little gritty). But, has since smoothed out and is not a problem. My right panel grip screws were backing out (a Locktite fix).

I grabbed this one up at $539 off of Gun Broker. $550 to the lower $600(s) seems to be a good price on them. I talked to a factory rep the other day and he told me the frame and slides were made in house in Ilion, NY with some of the smaller parts subbed out. They are built at the NY plant.

In the past I have only owned Colt 1911(s). To me "Colt" ~ just sort of sums it up. However, my R1 out of the box out performs the stock Colt(s) I have owned. In fairness, it came with the match barrel, lowered ejection port, beveled magazine well, and the three dot sight system. For me, essential upgrades that were after market on my older Colts.

The ivory is my upgrade.

Which 1911

Ok so I am looking to buy a 1911 in the next couple weeks and have narrowed it down to the Citadel for 499, the Springfield GI for 519, or the Taurus for 538. These are the list prices at the store down the road from where I work. First which would you choose and second are these good prices.

from these, i'd pick the Taurus. i've shot all three, and i've owned, currently own, or have handled others, and from the three choices, the Taurus is the best for the money. the prices seem about right, at least for the shops in my area. in my house right now, there's a Taurus, an American Classic II, a Firestorm DLX, a Springfield Armory gov't 1911A1, and a Colt. i carry the Taurus and the American Classic more than any of the others.
 
For not a whole lot more money, my choice would be a Smith & Wessom 1911, external extractor and all. Though I have no experience with one, the new Ruger 1911 looks promising.
 
Metro Arms corp 1911 American Classic ll. Very nice gun at any price and customer service is excellent. I was going for either a Para or the Taurus but after handling the MAC there was no question. Tim
