I was a bit spoiled as my first ever 1911 was a series 70 Colt Gold Cup as a young man. Now that I own Kimber, Colt and Springfield, I believe I would come down on the side of Kimber as opposed to an "off the shelf" Colt. There are no really meaningful differences, just personal preferences that Kimber adresses that Colt hasn't that's all. I would feel comfortable with either one, so I would reiterate some points above - Pick the one that suits YOU the best and fits your price range the best. If it's to be a daily carry weapon, pick the model with the bells and whistles that you want on a weapon already in place out of the box.
IMHO you can't go wrong with either brand.
