Which would you choose

If you had your druthers, assuming the rifles are all in very good condition, would you prefer the Remington 788 or the Remington 722?

Having had a couple of each, no question - the 722.

While they have good reputation for accuracy the 788s are ugly and heavy. While not as nice as the 725 I would take 722 over 788.

The 725 was a fancier version of the 722, right?

I like the Model 725 best (but try finding one in good condition and in the caliber you want for a decent price ) but, between the 722 and the 788, because I'm a reloader, I'd pick the Model 722-essentially a Model 700 (the Model 788's rear locking lugs have reportedly caused some case stretching issues for some reloaders).
