Isolate the sale items as much as possible, hang tarps as required to segregate other items, and keep a sharp eye. I have held many such sales, and have often caught shoplifters as well as cons who pick up non-sale items and try to buy them. This latter type usually wait until someone who looks inexperienced (usually a woman) is handling the checkout, then come strolling up with a $500 chainsaw that they've stuck a $20 price tag on.
