I can only speak from my experience in the early 90s in Desert Storm and my time in Somalia, but I think Hso hit the nail squarely on the head. A good multitool will prove itself to be about 1000 times more useful on a daily basis than a tradtional field knife will. Out of habit, I always look towards Leatherman, but they aren't the only game in town anymore. Obviously, I am mostly just repeating what has already been said, but I cannot emphasize enough how delightful a good multi-tool is in that environment. You can also send along a good folder, from which there are many choices, and that should cover any knife/tool needs that they might run into.

But, since you sort of asked about field knives, let me throw my two cents in:

It's just my opinion so take it for what it is worth, but if you really want to get them a field knife, I am personally pretty impressed with the Gerber LMF line. I have handled a couple here and there, and aside from generally feeling and looking like good, tough knife, they are also of reasonable size and weight and they have a decent sheath. I repeat, if it were me, I would rather have a multitool, but if a field knife were in my future, I am pretty sure that the LMF II would be the one for me.
