I was in Uncle Wally's yesterday and a Bavarian Edge knife sharpener caught my eye.
The price was right for around 20 bucks so I brought one home.
I am truly amazed at the effortless way to get a razor edge on a blade.
I have been a Spyderco user since forever but the Bavarian device is causing me great wonder.

There's a similar sharpener out there called the V-Sharp by Warthog.

Some differences.

1. The angle of the sharpening surfaces varies on the Bavarian edge during the sharpening stroke while the V-Sharp products maintain a constant angle throughout the stroke.
2. The BE uses tungsten carbine sharpening surfaces, the VS uses diamond hones.
3. The BE sharpening surfaces are not adjustable for angle, most of the VS variants can be sent to three different bevel angles.
4. The BE does not have a blade guide, the VS products have a blade guide to insure that the knife blade is held perfectly vertical.

Of course, the VS products cost a good deal more than the BE.
 
Yup, that's a good point. The Vsharp hones appear to be flat-edged so they wouldn't work on serated knives.
 
I sharpened all of our kitchen knives with this new toy and also my filet knives.
It's awesome ! Follow the simple directions !
