I recently (yesterday) bought a Uberti 1873 Cattleman El Patron Competition.

I love the checkered grip, lowered hammer & the hand-tuned Wolf springs.
The trigger feels like I've fired it 500 times.

Now the part I wish they did...

I have a Cattleman New Model Brass.
I wish they offered the El Patron with a brass backstrap & trigger guard.

I tried to Frankenhondo it with the brass on the new gun, but it didn't line up.
The new grip is narrower (front to back) than the old one, so the brass stuck out of the wood.
 
If the backstrap is made of brass it can be reshaped to fit the stocks you have, or you can make new stocks to fit the backstrap and trigger guard. In any case refinishing the metal parts isn't necessary.

Back in the 19th century you would occasionally see a Colt Navy or Single Action Army fitted out with 1860 Army handles.

Note: The 1860 Army back strap was usually steel, and might have to be reblued. However that shouldn't be particularly expensive.
