two things
one, air soft wont break a window. I suppose it is possible that one could if it hit just right, but then I suppose it is also possible the tire will pop off my car if I hit a pot hole just right. Lots of things are possible but not likely. Take the offending gun aim it at one of your own windows and fire. If it doesn't break point this out to neighbor, if it does you are now paying for two windows but at least you have seen an air soft break a window and that's something few of us will be able to say.
Second, and this is the problem. You have already agreed to pay and accepted responsibility. From a legal stand point* once you agree to pay you are generally now required to. You acknowledged the possibility and accepted that it was indeed your fault when you accepted responsibility and agreed to pay. Short of being able to prove fraud (he broke the window himself, window was already broken, window had a defect, etc) you now pretty much legally have your hands tied should he wish to pursue it in court.
*I'm not a lawyer so that is a lay opinion and my understanding, laws also vary by area.
