Which would you prefer, a fix stock or a under folding stock on an AK type rifle
 
Depends, I'm I looking at it or do I actually have to shoot the silly thing?

For looks, underfolder. For actually shooting I'll take a fixed stock any day of the week.

My own AK has a AK-100 side folder on it. It folds as short as the UF but locks up solid and provides for good cheek support, unlike the underfolder.

never liked the cheek weld or lack thereof on the underfolders

plus they all seem to get loose

If I can't get the AKS-74 or AK-10x type sidefolders, then it has to be a fixed stock. The wire type sidefolders and the underfolders just give away all ergonomics and shootability in favor of the portability factor.

Fitting it in a small space is cool, but sometimes you just want to shoot the thing, you know?
 
I don't like underfolders. They look cool, but tend to be wobbly and do not offer a great cheek weld. I greatly prefer a fixed stock. If I want the gun to be able to be more compact I would go with some other type of folding stock.
 
I actually swapped out my WASR wood stock with an VLTOR 6 position Modstock, which has great cheek-weld and is adjustable for length of pull. Also has a storage compartment, etc. I love it - the only drawback being that it cost about half of what I paid for the original rifle!
 
I prefer the fixed wood stock on a gun you will actually shoot once in a while. I have an underfolder. It looks cool and gets very compact but the cheek weld sucks. If it's something you'll be getting in/out of vehicles a lot, firing from windows, etc. it's great.
One thing I did that helps the cheek weld is to wrap paracord around the side of the stock that contacts my cheek. It's slightly softer and not so cold but it still can't hold a candle to a fixed stock.
Keep in mind those are two stocks that are not easily interchangeable. The underfolder requires two big ol holes in the sides of the receiver so if you get a UF model and want to go to a fixed stock you'll have some holes to fill/weld. If you go with a fixed stock and want an UF you'll have some holes to drill. I don't think side-folders have this problem and are probably more useful as an actual stock.
