I am 6'5" and about 210 pounds. The standard stock on the AK is way too short for me. It thumps me in the face with the rear of the receiver cover, and like you, it makes me feel claustrophobic. There are options though. As mentioned, you could simply slap a NATO length stock on it, probably as part of a stock set. K-VAR Corp has them in a variety of colors from black to plum, and they don't sell anything crappy, unlike TAPCO, which can be hit or miss.
ACE is also good stuff. My brother has the Galil style on his AK. It is rock solid and almost bombproof. Between the different spacers and battpads they have for it, you can get it to just about any length you desire, but it won't be as readily adjustable as the set up I have. I have a folding six-position M4-style stock on mine, courtesy of ACE. Its polymer construction may or may not be quite as durable as the tubular aluminum of the Galil style, but it is still solid and as durable as anything I need short of running it over with a tank or using it to pound in railroad spikes, or something similarly retarded. The nice thing about it is that it allows me to quickly adjust length of pull to suit my needs. I can shoot it in my backyard without even a t-shirt on, then click it in a position or two to accommodate heavier clothing, pack straps, or a smaller statured shooter. And because it doesn't require the buffer assembly that the M4 does, it folds for easy transport. ACE's set up even allows you to choose which way it folds. I have mine set up to fold to the right because the optics mount on my Kobra interferes with it if I try to fold it to the left.
