This is do-able, of course, but there are those of us that shoot with both hands. In fact, I'm a big believer in training to shoot with both hands. I don't want controls that work differently depending on hand. I want the exact same controls in both locations to eliminate confusion in a stressful situation.

My favorite carry gun (I currently live in a very bad area, to be rectified soon...) is a FNH FNP 45. All controls are identical on both sides so there's nothing to work around or figure out in firefight. It works so well I picked up a FNX 40 recently for a backup gun. It's absolutely identical to the .45, other than being slightly smaller. Another side benefit is that .40 ammo is cheaper and easier to find than .45 right now, so I can train more with the .40 and all the muscle memory transfers over to the .45 perfectly. With either hand.

And if the stuff impacts the rotary impeller, I can carry both on both sides and use them as needed with no awkwardness or penalty.

Having to do things differently with either hand is just asking for failure in my case.

That is why I usually differ to the first fully ambi 9mm (but it has a steel frame) the H&K P7

From the first P7/PSP it was designed to be operated equally well with either hand with the cocking function, releasing the slide from slide lock and releasing the mag mechanisms all located on the center-line of the frame. the only one sided functions had to do with fieldstripping the gun

Even when they modified the original to accommodate the American LE (M8) and Military (M13) market, they placed mag releases on both sides of the trigger guard
 
ah, beat to the sti nod. I've handled one and was very impressed. When I go back to plastic guns it's the one I'm going to get. much better trigger than anything else plastic.

as a lefty I found I can use most pistols except sig without problems. I can reach the slide release and mag release with my trigger finger. I can also release the slide by pulling it back. It's not hard.
 
My top two suggestions - P99 A/S Walther and Hk P2000 are out of your price range, unfortunately. They are both fantastic pistols!
