Springfield
I've handled recent production guns from all 5 of the listed makers and shot examples of 4 out of the 5 (haven't gotten to shoot a SIG 1911 yet), my experience is that the Springfield was the best of them.
Colt came close, but the springfields I've handled all had better fit, finish, and small refinements (fewer sharp edges), lacked the "Series 80" garbage, and within the small random sample I've been able to play with in the past few years, the Springfields were more accurate/shot better.
With regard to Kimber, I have to admit that I think I'm a bit biased. I can too well remember when they were building Better guns, with better internals, for less money, and I'm just not impressed anymore
