I am currently a Florida resident with a Florida CCW permit. In January, I am moving to Texas. I know Texas has reciprocity with Florida... but, for how long can I carry in Texas under my Florida permit once I move there? Can I do it as long as I'd like, or do I have only X number of days to get my Texas permit?

Clearly, I plan on taking the Texas permit course immediately, I just know it can be a couple months before they send me the permit.

You have 30 days to notify of a change in address. Obviously you will have a Florida address and not be living there.
Here is a great resource for Texas Concealed Carry.

I did not stay at a Holiday Inn Express last night nor am I a attorney. Therefore I will not offer legal advise that you could pay the price for.
It is taking roughly 30 days to get your plastic right now in Texas.

My humble recommendation is do not carry and get your Texas Concealed License friend.

Well, I AM an attorney actually, and I don't want to go without carrying.

Florida allows you to have your Florida CCW without being a resident, so all I need to do is let Florida know my new address, and my Florida permit is still valid. I want to know how long I can live in Texas and carry under my Florida permit. It may be the answer is as long as I'd like, but I know some states (like Georgia) give you X number of days to carry under your old state's permit before you have to get a permit for that state.

Look at page 6 of the .pdf friend.

GC §411.173.
NONRESIDENT LICENSE. (a)
The department by
rule shall establish a procedure for a person who meets the eligibility
requirements of this subchapter other than the residency requirement
established by Section 411.172(a)(1) to obtain a license under this
subchapter if the person is a legal resident of a state another - state
or if the person relocates to this state with the intent to establish resi-
dency in this state. The procedure must include payment of a fee in an
amount sufficient to recover the average cost to the department of
obtaining a criminal history record check and investigation on a
nonresident applicant. A license issued in accordance with the proce-
dure established under this subsection:
(1) remains in effect until the license expires under Section
411.183; and
(2) may be renewed under Section 411.185.

So you are really asking 2 different things.

1) Can you use a Florida non resident permit in Texas, and if so how long?

2) How soon after moving here can you apply for a Texas permit?

To 1, you can keep your Florida permit here forever if you wanted to, there is no requirement that you must have a resident permit in TX. But, the fine print of the gun free school zone thing only protects you if you have a resident permit, so on the very slight change you run afoul of that mess, you will be in trouble with a non resident permit.

For 2, The Sarge posted the permit "conversion" rule.
