Would agree they don't teach you the motor skills involved, however many of these games do have a good deal of the finer points involved. Calculating elevation, windage, where you will find critters in a given territory, given cover, under certain weather conditions, etc. I haven't played a lot of hunting games, but those I have, are definitely fun.
Fishing games is diferent story, and being a die hard fisherman, they will test your knowledge of the sport. They give you a set of parameters to fish in (weather related, structure, water clarity, types of lures, color choices in lures, rods, reels, line weight, drag settings, etc.) and if you don't know what choices to make you don't catch quantity or quality fish. The hunting games I have played, seem to incorporate some of the same need for knowledge.
Unfortunately, for those that simply play games, they miss the finer points. Pay attention to weather conditions, pay attention to terrain and cover offered while playing, pay attention to trajectories for the guns and ammo selected, and you can learn a little, because many of the basics of the sport are built into these games.
