Choate Machine & Tool (www.riflestock.com) sells a folder for the M1 Carbine which should fit your Plainfield. If you want a replica of the USGI M1A1 folder try Sarco or Numrich.
Either Sarco or Numrich should have GI mags, too. The 15 rounders will be the most reliable.

The choate model is a good quality folding stock but they aren't cheap. If you really need a folding stock, buy a quality one and it'll hold up for a long time. If you can, try to actually hold the one you're going to buy. Different brands vary greatly in comfort. The choate stocks have been comfortable in my experience.
15 and 30 round mags
FYI
The 15 round mags where primary made for the semiauto M1 while the 30 round mags where made for the selective fire M2 and M3s . They came with a different magrelease whitch included a support for the longer and heavier 30r mag.
M1s supplied with a M2 magrelease will be more reliable.

how about a scabbard? 
Just wondering, does any one know where one could fine an M2 mag release? I've always wanted an M1 Carbine, and now that Wolf in manufacturing .30 Carbine, I may have to get one.

Since Kahrs are GI spec, I think so. I don't have one myself, though... THRer M2 Carbine would know, I think.
