The Constitution was amended to authorize the federal government to tax income (the Sixteenth Amendment). As to the other, the courts have expanded the Commerce Clause to support many such laws. See

Gonzales v. Raich, 545 U.S. 1 (2005).You might not agree, but the Founding Fathers gave the federal courts the authority to make such decisions (Constitution, Article III, Sections 1 and 2):
