I want to change out the ambi safety on my Ultra CDP II to a strong sided version. How hard is this? How does the ambi come apart?

Most ambi's are held on by the right grip panel.
Take it off, and the right safety lever should pop off with a little light force.
After that, the other one comes out just like a normal 1911 safety.

The other way it is done uses an extended disconnector/sear pin with a small slot in it which sticks out the right side of the frame.
This secures the right lever.

Remove the slide.
Remove the left lever as you would any M1911 and then rotate the right lever up and out of the pin slot.

Kimber ambi right side lever is held on by a head on the hammer pin running in a dovetail slot in the lever. I don't know how to get it off, but there has to be a place where the slot runs out and you can disengage the lever.

The slide removed from the gun, the hammer cocked, pull/wiggle the L/H lever outward until it clears the sear and will move upward. Now remove the R/H lever from the hammer pin and out of the gun.

You'll need a new standard hammer pin to eliminate the R/H lever.
