I'm going to also suggest looking at revolvers. Not just because of the grip size (which is DEFINITELY going to help), but...

Exactly how well does she enjoy the process of gun cleaning and maintenance? Field stripping an auto pistol?

A revolver would be much easier for her to clean, if this is really to be /her/ gun.
 
My 12 year daughter shoots with me quite a bit. Here are some of her favorites:

SW 3953
SW 5904 with Farrar Grips
JFrame Smith with Uncle Mikes Boot Grips
Star Ultrastar
Walther P22

She does not like the Ruger 22/45
 
My first thought was a Kahr PM-9 until you said she has trouble racking the slide. Everybody has trouble with the Kahr, so nix that.
I think the ideal gun for a lady is the Sig P-238. It looks good, easy slide to rack, minimal recoil, real night sights, slide locks open on the last round. And it is slim (regardless of what Sig says) I measured mine at .8" at the widest point, the safety. The only downside for some is it's single action only.

S&W 3913 or SIG 239 9mm. The two best compact single stack 9mm's out there. I prefer the 239 because I don't like slide mounted safety. Both are superb. S&W even makes (or did make) a Lady Smith model of the 3913.
 
my wife has small hands, and the bersa thunder and walther pk380 work well for her. in revolvers, my sp101 works well for her too.
 
All of the women in my family prefer the CZ 82 we bought recently. All have small hands all thought the grip was just right and liked the heft of the pistol. They all shoot it well.

I thought I kept up with new pistols, but I've never seen the Kimber Solo before.
It looks great. How does the size compare with the Kahr PM-9?
 
Never thought I'd offer an opinion on one particular pistol, but last week I picked up a Bersa Thunder 380 for a decent price. I didn't expect a lot from it but today after firing it I am very impressed. Weight, size, fit to my big hand, hammer drop safety are just a few things I liked. One thing I will say right up front- it does not like the CHEAPER ball ammo, not that it failed to feed but shots were not exactly where I wanted them to be. Second clip was using Hornady CD ammo (expensive per shot) but shots were all close and a steady hand could do much better. Just my 2cents worth.
