Looking for new pistol

I have done some research but could only find 1 pistol that is close to what I am looking for, a semi-auto pistol with the following characteristics:

1911 platform DA/SA
Standard sights but night sights ok
not polymer
3" bbl
double stack but would accept single stack
officer frame
no ambi safety
blued
.40 S&W.

AFAIK, the only 1911 retail package that will fit your spec is a Para-Ordnance--and that would not accept a single stack magazine.

I don't know of any firearm that will meet your single-double criteria, though.

If you like 1911 ergonomics, you can also consider the CZ-75 platform--e.g., the CZ and EAA / Tanfoglio pistols. They have the same ergonomics as a 1911--but they have a large grip, so your hands need to be 'large.'
