Need help with Remington 700 decisions

Well first off, you will be happy with either of those I'm sure. But since you asked, here are my thoughts :p

The savage is a nice rifle, but, in my opinion, the only reason I'm looking at one of those is for the 1:10 barrel from the factory and the DBM.

An SPS varmint rifle has a barrel and action that can very quickly leave the entry level, and get you very far in the realm of precision shooting. For me it's a simple change of stocks and you have a very fine rifle (some people like the stocks though). From there you can make ugrades to the action and barrel that are really going to show it's capabilities. But even out of the box with match or decent reloads, I bet youre around .8 moa.

One mans opinion. Make sure to reference the first sentence again.
 
Here's my set up, originally purchased in 1991, Remington 700 BDL sporter, 30-06 Springfield. It currently wears a Pride Fowler 3-9x42 RR800-1 with Burris steel bases and A.R.M.S. #22 Rings.

I have on order an H.S. Precision Pro Series 2000 Sporter Thumbhole stock, OD with 14" LOP (I measured my old set-up and added 1/4" as it has always been short, even with the 1/4" the new recoil pad added.) The stock is this style with full aluminum bedding block.

The 30-06 Remmy has a 1:10 and can be loaded to simulate loads commonly fired by the .308 in addition to heavier projectiles. The biggest difference of course will be the long action vs. the short action.

This was sighting in some 168 AMAX at 100 yards with a Hawke SR (a $150 scope). After dialing in, I had two rounds left that did this:

Hope no one is on dial-up, my apologies if you are. Again, out of the box, they're all quite capable. The accuracy guarantees are like telling someone a Ford Fusion gets at least 10 MPG city driving. They don't want every untrained shooter beating down the door with returns over claims of one-hole groups. Total cost: $1,400 (the rifle was $399 way back when).
