Haven't seen or heard anything about the Phoenix Redback but it looks really nice but as you alluded to, probably way above my pay grade too! I also second your notion of looking for a used (but in great condition), Sphinx AT2000!
I've had two chances to buy an AT2000 and both came at times where I was selling guns to stay afloat, not buy. If one comes along one of these days for anything close to a sane price, I'm going to get it, if it's even slightly a sane thing to do.
The 97B has to be the softest shooting .45 out there. I've gotten CGW to do their "E" conversion and installed a stainless guide rod, extended thumb safety, and adjustable rear sight. Now it has a trigger very almost as good as my 1911s.
The original grips look nice but leave something to be desired wrt getting a good grip. I like your new grips and the functional proof of the pudding is the shooting results. I changed out the grips on mine, too. This is what I have on there now:
