Also, when seating primers we seat them till they bottom out in the pocket.

I wasn't aware there was such a thing as a adjustable primer pocket uniformer. I think I'd get fixed sizes. That's to small to mess with adjusting.
 
There are, but like you, I want a fixed one. The only primer pockets I uniform (And clean) are ones for brass to be loaded with "match" loads. 6 PPC for Benchrest when I competed, & .308 for a "long range" rifle I shot a few F Class matches with. My "accuracy" minded loads for a .223 AR don't get uniformed, only cleaned. I am not competing with them, just having fun with them. No other primer pockets get cleaned. The debris only builds up so much. One of these days when I get my wet tumbling stuff set up (I have it) the primer pockets on more rifle will get cleaned. Not sure I will ever wet tumble pistol brass. Maybe.

But to answer the question, I don't know. I guess I could go measure my fixed PPU for SR.
 
I measured pocket depth using an RCBS vernier caliper. Then used a Redding carbide cutter thats at a fixed setting.
Had 100 38 brass with shallow pockets. Had to chuck the cutter in a drill, to much work by hand. Comes with the drill attachment.
Useful to clean pockets, as Walkalong said.
