They don't have to prove where you were or were not going in order to arrest you. Maybe they don't bring charges, but I'll bet it isn't terribly difficult for an officer of the law to articular probable cause that you were not abiding by that law.

Heck, it could be as simple as you were pulling out of the parking lot of a restaurant after dinner when they pulled you over.
 
With 50 states and countless jurisdictions it is pretty hard to have a conclusive answer to a question like this. I would look to your states game laws first since they are typically the ones who have concern over the way long guns are carried. The state police would be my second with local county/city police if the wildlife and state has no problem.
It is important to realize that there are some practices that are totally acceptable in some states that will land you in prison in others. Take most Rocky Mtn states and compare them with NY,Ill or NJ for a good example.

In OK the carry of an unloaded rifle, cased or uncased, in a vehicle is legal. It's legal for a concealed carry holder to carry a loaded rifle in a vehicle. One sometimes sees guns in the racks of pickups.

Laws vary from State to State, but the OP asked specifically about Minnesota. The laws in Oklahoma, Washington, Ohio, etc., are irrelevant. If someone can come up with accurate information about Minnesota, I'm sure the OP would appreciate it.
