(This is more about 1911s in general, not the SA GI in particular.)
For the best chance of reliability, you should choose a bullet with a profile as close as possible to that of a round-nose FMJ, since that is what the gun was designed around. As for the feed ramp and barrel throat, if the angles, dimensions and fitting are correct to start with, they don't need polishing.
I have a 2010 SA GI. I have never found a bullet that it won't feed. Now, I haven't shot everything under the sun, but as well as it feeds 185gr. LSWC's and WWB JHP's I don't see why it won't shoot any others.
In all fairness, I did polish the feed ramp. I've done nothing to the barrel throat, but I did take a pencil eraser and a little 800grit sandpaper and polish the frame ramp. Just did enough to remove the horizontal machining marks.
