Self defense against non lethal weapons?

I'll never see 65 again but I won't let anyone take what I have left away. Awareness, walking stick or cane and distance is important. I have my personal space and defend it. I am in decent health and work at staying that way. I can use my walking stick(which I don't need) for most attacks. My handgun and knife are backups not primary to a non lethal attack. I don't hesitate, I defend my personal space and offence is still the best defense. I will trust any jury in WV or KY when it comes to self defence if it even goes that far.
 
So lets say I have a concealed weapon and someone (not knowing yet I'm armed) is engaging my 53 year old self with his superior physical force of youth and physique... (i.e: obviously capable of beating my a** into a pulp and taking control of the gun I'm carrying). At what point am I in a "gun fight" and justified in using it on the assailant before the assailant potentially takes control of my gun and uses it on me... ???

I'm in NC for those that may know the nuances of this in this State.
Exactly. To me, the attack warrants brandishing. If that doesn't do it, then I assume he has something more nefarious in mind. At any rate, if I brandish and he advances, he's getting shot, plain and simple. I'll warn him as many times as I can and I'll try to retreat (I don't HAVE to, but I will out of concern for defusing the situation). But if he tries to get the upper hand on me, he's gonna lose.

I carry so I don't have to be a victim. It really is my only reason, the only one that outweighs the hassle of carrying all the time. Been there, done that, have the scars to prove it, don't care to repeat.

And frankly, I don't care what their intentions are. Robberies go wrong all the time. That, and I just don't like being assaulted. All strangers are suspect, and armed strangers, lethal or not, are in effect dangerous strangers.

Plus, if he robs you, then he WILL be armed with a deadly weapon. At what point does it become a gunfight? I say it becomes a gunfight the second someone with a gun either a. attacks or b. is attacked.
