The edges of my brand new stainless Springfield Mil-Spec's grip safety kinda digs into my hand during recoil. If I smooth out the grip safety edges with a white ceramic dremel bit would the finish be permanently discolored? Or should I just stone the edges by hand? Definitely too sharp to live with...

You should be able to carefully round off the edges and keep it looking good. If you use a dremel, go real slow.

Stone gently, I had the same issue with my Mil-Spec but it is parkerized so I changed out the grip safety with SS making all the sharp edges nice and soft/smooth, also changing out with SS the main spring housing, thumb safety, slide lock, and the magazine release. Contrast looks good.

I'll 2nd or 3rd light stoning.. or 600 grit paper. You just need to break the edges.

don p. that does look good. Maybe a longer AL trigger and a stainless hammer?
