I'm of the opinion that your first 1911 should be a basic one with no frills.
The Springfield GI and Mil-spec are good guns and inexpensive. After you've shot the snot out of your basic no frills 1911, then decide if you want a beavertail grip safety, adjustable trigger, fish scales for slide serrations, etc.
The only other no frills 1911s I know of are the Colt Series 70, Series 80, Old Rollmark (ORM) 1991, and New Rollmark (NRM) 1991.
If you decide the 1911 is the best thing since smokeless powder, buy a Colt XSE, Ed Brown, Les Baer, etc. The Colt XSE will run you around $900 and the other two $1,800 or more.
Personally, I own a stainless steel Colt NRM 1991 Government Model ($749 plus tax) and a Colt XSE Combat Commander ($949 plus tax). Both are outstanding.
